Grilled Salmon With Avocado Salsa


salmonI was able to pick up some Wild Caught Alaska Sock-Eye Salmon fillets this week and decided to use them in this fantastic recipe from Buzzfeed. A mix of olive oil, salt, pepper and paprika is used as a marinade for the salmon, and thirty short minutes later you are ready to put them on the grill. Go ahead and chop up the red onion and avocado while the salmon is marinating and set the mix aside once it is tossed with the lime vinaigrette. I was surprised that just two minutes on each side was all you needed to cook the salmon to perfection. Just to be sure I used an instant thermometer to make certain that I didn’t over-cook the fillets — perfectly done at 145 F.  A beautiful, healthy light meal that is so pleasing to the palate. Served here with Corn Edamame Salad.

Grilled Salmon With Avocado Salsa (Serves 4)

Ingredients (for salmon):

  • 1 Tbsp. olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 4 salmon fillets
  • Chopped cilantro (optional)

Ingredients (for salsa):

  • 2 avocados
  • 1/4 red onion
  • 1 lime, juiced
  • 1 Tbsp. olive oil
  • 1 1/2 tsp salt


  1. In a large bowl, mix oil, salt, pepper, and paprika. Coat the salmon fillets with the marinade and refrigerate for 30 minutes.
  2. Grill the salmon on high heat for two minutes each side.
  3. In a separate bowl, lightly toss avocados, 1/4 red onion, the juice from one lime, 1 Tbsp. olive oil and salt to taste.
  4. Spoon avocado salsa on top of the cooked salmon. Top with finely cut cilantro and enjoy!
